Delicious semi homemade chocolate cake with raspberry and buttercream filling and icing, topped with fresh raspberries and shaved Velrona chocolate . I added 1/2 cup of quinoa flower to a recipe of dark chocolate cake mix , used 1 cup of milk, 1 stick of non salted butter, 1/4 cup of sour cream full fat, 3 eggs, 2 tsp of real vanilla extract.
It turned out delicious !

I decided to try a chocolate cupcake recipe as a cake for my husband’s birthday. It turned out delicious, almost like a brownie but not quite. And, the best part was that I used a different buttercrram frosting recipe made with egg whites and a lot less sugar, added a bit of rum and voila. It’s one of my best cakes ever! I haven’t tried this type of buttercream icing before; but it’s delicous! Similar to this Swiss Meringue Buttercream but I added 2-1/2 tbsp of dark run.

This was an order for a Miami Dolphin fan, after my Sunday cake for my class, on Tuesday night I bajed this one – for a birthday. I was really excited to make the cake and see how it turned out. It was a chocolate cake – delicious recipe. Used sour cream and made the batter very silky. Well, it looks cute, even has a fondant helmet! The person that ordered the Miami Dolphin Cake loved and I hope they enjoy the taste as well! It was had to ice he dolphin; next time I would use fondant and make it really smooth.

This cake recipe is actually called chocolate butter cake, but I also added walnuts, left over from my delicious carrot cake, and a strawberry filling. For the filling, I mixed low sugar red raspberry jam, mascarpone cheese, and homemade heavy whipped cream. The chocolate icing was from the store, but I diluted with some low-fat milk; otherwise it’s too sweet. This cake was very good, but since I used a pan that has a heart shape in the middle, it was quite difficult to flip to top with filling. It was heavy and I had a bit of an accident; you can see that the top of the cake is not perfect. However, the taste was more then perfect!!!
