Interesting enough my thoughts about the population getting even more overweight was probably on the right track. This last weekend I read a Sun Sentinel article about the stress people are under and the lack of money; thus, going to reach for cheap fast food and end up gaining a ton of weigh. This weekend I made a delicious moist mango coconut bread from a book my husband and I picked you in our last trip to the Keys. The bread is so yummy and easy to make; btw I used walnuts. It’s almost like a banana nut bread but more mist. It got great compliments – so, here is a picture and the recipe. Enjoy!

Mango Coconut Bread

Mango Coconut Bread

 Ingredients

1 cup of sugar
2 eggs
1/2 cup vegetable oil
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1 cup pureed ripe mangoes (2 mangoes)
1/4 cup shredded coconut
1/4 cup macadamia nuts or chopped walnuts
1/2 tsp vanilla
8-1/2 x 4-1/2 inch loaf pan or 18 2-ounce muffin cups
Directions
Preheat oven at 350 degrees. Grease the loaf pan or muffin cups. Beat the sugar and eggs together; add the oil and continue to beat. Sift the flour with the baking soda, cinnamon, and salt. Gradually add to the egg mixture. Add the remaining ingredients and blend. Fill the loaf pan or muffin cups. Bake the loaf pan one hour, the muffin tins for 20 minutes.

Well, I guess when you are 30 something, or more like late 30’s you enjoy a Saturday night in and even better, a Baking Saturday night in!!! At least last night was what I felt like. Around 7 pm I had the urge to bake a wheat bread, my first time aking bread and I never thought I would like. But, I found an easy recipe at http://www.tammysrecipes.com/homemade_wheat_bread and decided to try. At first, I was like hum I have to let it set twice, once for 40 min then for 30 min, it would be to late by the time it was done. But, no, it worked out perfect, because I also decided to a Super Bowl Brownie for my husband. So, in between bread dough resting time, I was working on the Super Bowl brownie.

I am not much of bread maker fan but since I have a bag of whole wheat flour I decided to to make some wheat bread, and it came out delicious, just like the picture on the original recipe site. It taste really clean and fresh. I love it! I might just keep trying different breads now; we’ll see. I know I will make at least two more loafs to finish the wheat flour. Check out my beauty…

Well, well, it’s only a week after I made my first purse cake and I just made another one! I recall myself saying I would not do another purse cake anytime soon; it’s just a lot of work. But, I could not refuse the order; mostly b/c I do enjoy making these fun cakes and getting people’s reactions! The money is okay, I gave my hairdresser a deal holding on her promise to advertise my cakes in her salon.

This one is a D&G purse cake and it’s brown, but the chocolate fondant sags a little and bubbled up here and there but it looks real. And, this time around, the cake is even better than the first time – I made sure it completely cooled over night wrapped in plastic to keep its moisture.

The handle was done last Sunday just so it was totally dry and hard – I still need to deliver it to her salon and I will have to drive at 20 miles/hr to make sure nothing cracks OMG it would be disaster, after all that work. Yes, it takes either almost an entire day or two night of work.

All worth it! I am sure they birthday girl will love it and be totally surprised. I got to make sure I have picture from her reaction.

It was the hardest cake I ever made! It took me about 5-6 hours to get the actual cake done and then another 3 hours to decorate. I didn’t even finish all of the details but I think it looks awesome!

It’s a green Dooney & Burke handbag cake; made of chocolate chip vanilla cake and chocolate cream cheese butter cream icing; so yummy! I can say for sure, after all of this work, this purse cake could sell for at least $150 plus; after all of the little details are finished.

If you are novice, you are looking at an entire day of work, at least, and maybe more details the next day.
