Delicious semi homemade chocolate cake with raspberry and buttercream filling and icing, topped with fresh raspberries and shaved Velrona chocolate . I added 1/2 cup of quinoa flower to a recipe of dark chocolate cake mix , used 1 cup of milk, 1 stick of non salted butter, 1/4 cup of sour cream full fat, 3 eggs, 2 tsp of real vanilla extract.
It turned out delicious !

The final cake was a rectangle, easier to cut and you get more slices – and ew did get a lot, plus I even brought some cake back home.

Took me about 3 hrs to decorate, just because I have to do it all, cut the cake, clean-up after each step, make the icing, different colors, pipe it, cut the gum paste for the logo — etc – but it turned out great. Everyone loved the look and taste!

Mission accomplished 😉

fl-key-clubI have been changing my mind about a cake I have to make for a Saturday barbecue for the Florida Key Club.

First, it was going to be a yellow sheet cake, then I saw the round logo on the web site and decided to make a 14″ round cake to fit the logo design, but decided the cutting would not be as friendly as a sheet cake, plus we might not have enough pieces for 30-35 people, or they will be too skinny. Now, I went back to the sheet cake, chocolate with one of two layers of butter cream …. aahhhhhh. I sometimes drive myself crazy!

I made this cake for a long time friend that is having a baby shower today! She wanted the cake to be similar to the baby shower invitation and itmel-shower-cake came out pretty good. It’s a chocolate cake with buttercream icing. Yummy!

I added the Super Mom-to-be cake topper because Mel is always so busy and doing 50 things at once, and now she will have a baby to care of too – she will be Super Mom!

I can’t wait to deliver the baby shower cake and enjoy the party with her; oh, it’s a girl!

I decided to try a chocolate cupcake recipe as a cake for my husband’s birthday. It turned out delicious, almost like a brownie but not quite. And, the best part was that I used a different buttercrram frosting recipe made with egg whites and a lot less sugar, added a bit of rum and voila. It’s one of my best cakes ever! I haven’t tried this type of buttercream icing before; but it’s delicous! Similar to this Swiss Meringue Buttercream but I added 2-1/2 tbsp of dark run.

This Sunday I had in mind that I would finish a lot of the stuff in refrigerator, like ½ can of cranberries and ½ can of crushed pineapple. So, in an effort to not let the food spoil; I was never a fan of it and specially now with the tough economic times, I hate to see any food go to waste, I decided to bake some yummy desserts and have it for the week. And, to add to it, I also wanted to bake some nice homemade wheat bread.

So, I got my baking gadgets and started my adventure. First, was the wheat bread; just because while it set I was able to work on the pineapple cupcakes. Then, secondly, I worked on the cranberry chocolate chip bar. The recipe was from the can of cranberry and the pineapple cupcake was this medium size pink cupcake recipe book I have. I added a few more things like roasted coconut flakes and added moist with condensed milk glaze.

All I can say is that it all turned out delicious, again! I am so proud of myself; I was never interested in any kitchen activities until about 2 years ago. So, it’s true that people can really change! Baking became one of my favorite hobbies. Also, I have to say that my husband inspired me to start learning about cooking as well. Now, he can’t complain even if he gets fat LOL!!!

These are just a few pictures of my test kitchen in last few weeks. Ah, I am lazy and take pictures with my phone, not a real camera. Then, email myself, edit a few things and post on the blog. Even though the pictures are not the best, I can assure you the chocolate torte and stacked cookie were both yummy and delicious!
