I am so glad I found out about Chef Jean Pierre Cooking School; I have been looking for school like this with crash courses on cooking and baking, it’s finally here. Actually, it has been around for a few years and with a full calendar of cooking and baking classes. My first class was French mini pastries with Chef Rob Sobkowski; he has been in the Food Network a few times and even won the Bridge Challenge Competition. So, you know you are learning from the best! The class was hands-on and I left with two boxes full of mini eclairs, cream puffs, and fruit tarts; and were they just so delicious. The cost for these classes are at least $120 but it was a 4 hour class; they give all of the ingredients, recipe, break with delicious hand food and best of all you leave the class with all of the delicious French pastries you just made! In addition, there is an assistant cleaning up after your mess and replacing your area with all new ingredients ready for the next step. I felt like Emeril!!! Just having fun and no worries about measuring and cleaning up. Also, all of the ingredients were weighed not measured with measuring cups; that’s how the pros do it. Chef Rob recommends getting a digital scale for proper measurent.
See what I brought home and I still have some left over tart dough and pastry cream that can be used for another fruit tart or creme bruelle! The cream will only last about 3 days in the refrigerator and cannot go in the freezer and the dough can be freezed for up to 3 months.
